Ingredients

  • 2 Tbsp. olive oil
  • 1 lb. ground turkey
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 2-3 Tbsp. chili powder adjust for spice level
  • 1 tsp. cumin
  • 1 can (14.5 ounces) diced tomatoes with green chilies
  • 1 can (15 ounces) kidney beans, rinsed and drained
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 cup corn (fresh or frozen)
  • salt and pepper to taste
  • fresh cilantro for garnish

Instructions

  • In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and sauté until it softens and turns translucent, about 3-4 minutes.
  • Increase the heat slightly and add the ground turkey. Break it apart with a wooden spoon and cook until browned, about 6-7 minutes.
  • Stir in the garlic and diced bell pepper, cooking for 2-3 minutes until fragrant.
  • Sprinkle the chili powder and cumin over the mixture, stirring to coat evenly. Let them bloom for about a minute.
  • Add the tomatoes, kidney beans, black beans, and corn. Stir to combine and season with salt and pepper.
  • Bring the chili to a gentle boil, then reduce heat to low. Cover and simmer for 20-30 minutes, stirring occasionally.
  • Taste and adjust seasonings. Ladle into bowls and garnish with fresh cilantro.

Notes

This chili tastes even better the next day. Feel free to adjust spices according to your preference.
