Vibrant Zucchini Stir-Fry with Bell Peppers

Ingredients

  • 4 medium-sized zucchinis, sliced into thin rounds
  • 1 medium-sized onion, thinly sliced
  • 3 cloves garlic, minced

  • 2 Tbsp. soy sauce
  • 1 Tbsp. olive oil
  • 1 Tbsp. sesame oil
  • 1 Tbsp. rice vinegar
  • 1 tsp. fresh ginger, grated
  • Salt and pepper, to taste
  • Optional: sesame seeds and chopped scallions for garnish

Method
 

  1. Start by slicing your zucchinis, bell peppers, and onion.
  2. In a large skillet, heat the olive oil over medium-high heat until it shimmers. Add the onions and sauté.
  3. Toss in the minced garlic and grated ginger, stirring for about 30 seconds.
  4. Add the sliced red and yellow bell peppers. Stir-fry for about 3 minutes until they start to soften.
  5. Add in the sliced zucchini and cook for an additional 5-7 minutes, stirring frequently.
  6. Drizzle the soy sauce and sesame oil over the vegetables, then splash in the rice vinegar. Toss everything together and season with salt and pepper.
  7. Remove from heat and sprinkle sesame seeds and scallions on top before serving.
