- Start by slicing your zucchinis, bell peppers, and onion.
- In a large skillet, heat the olive oil over medium-high heat until it shimmers. Add the onions and sauté.
- Toss in the minced garlic and grated ginger, stirring for about 30 seconds.
- Add the sliced red and yellow bell peppers. Stir-fry for about 3 minutes until they start to soften.
- Add in the sliced zucchini and cook for an additional 5-7 minutes, stirring frequently.
- Drizzle the soy sauce and sesame oil over the vegetables, then splash in the rice vinegar. Toss everything together and season with salt and pepper.
- Remove from heat and sprinkle sesame seeds and scallions on top before serving.
