  • 1 ½ cups roasted pumpkin puree
  • 1 cup heavy cream
  • ¾ cup brown sugar
  • 2 large eggs
  • 1 tsp. ground cinnamon
  • ½ tsp. ground ginger
  • ¼ tsp. ground nutmeg
  • 1 ½ cups all-purpose flour (for crust)
  • ½ cup cold butter (for crust)
  • pinch salt (for crust)

Method
 

  1. Begin by combining all-purpose flour, cold butter, and a pinch of salt in a mixing bowl. Use your fingers or a pastry cutter to blend the mixture until it resembles coarse crumbs. Press the dough into a pie dish, ensuring that it's evenly distributed along the bottom and up the sides. Chill in the refrigerator while you prepare the filling.
  2. In a large bowl, whisk together the roasted pumpkin puree, heavy cream, brown sugar, eggs, and spices until smooth. This mixture should be creamy and fragrant.
  3. Preheat your oven to 425°F (220°C). Pour the pumpkin filling into the prepared crust, smoothing it with a spatula. Bake it for about 15 minutes at the higher temperature, then reduce the oven temperature to 350°F (175°C) and continue baking for an additional 35-40 minutes. The pie is done when the filling has set but still jiggles slightly in the center.
  4. Allow the pie to cool completely before slicing. This cooling time helps intensify the rich flavors. Serve with whipped cream or a scoop of vanilla ice cream for a decadent touch.
