  • 1 lb. baby carrots (or 6-8 medium-sized carrots, peeled and cut into sticks)

  • 3 Tbsp. unsalted butter
  • ¼ cup packed brown sugar
  • ¼ tsp. salt
  • ½ tsp. ground cinnamon
  • ¼ tsp. black pepper
  • Fresh parsley, chopped (for garnish)

Method
 

  1. If you're using baby carrots, simply give them a rinse. For regular carrots, peel and slice them into sticks about the same size, ensuring they cook evenly.
  2. In a large skillet, melt the butter over medium heat. Add the carrots to the skillet and toss to coat them in the melted butter.
  3. Sprinkle in the brown sugar, salt, cinnamon, and black pepper. Stir gently to ensure the carrots are evenly coated.
  4. Reduce the heat to low and cover the skillet. Allow the carrots to simmer for about 15-20 minutes, stirring occasionally.
  5. Once cooked, remove the lid and let any excess liquid evaporate. Garnish with freshly chopped parsley and serve.

Notes

Keep an eye on the carrots to avoid overcooking; you want them tender yet crisp. Fresh herbs add a burst of color and contrast; don’t skip the parsley!
