  • 4 thighs chicken thighs (bone-in, skin-on)
  • Salt and pepper to taste
  • 2 Tbsp. olive oil
  • 4 Tbsp. unsalted butter
  • 1 head garlic (cloves peeled and roughly chopped)
  • 1 tsp. fresh thyme leaves
  • 1 tsp. fresh rosemary (chopped)
  • Juice of 1 lemon
  • Chopped fresh parsley for garnish

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Season the chicken thighs generously with salt and pepper.
  3. Heat the olive oil in a large oven-safe skillet over medium-high heat. Once shimmering, add chicken skin-side down and sear for about 7-8 minutes until golden and crispy.
  4. Reduce heat to medium, add butter, garlic, thyme, and rosemary to the pan, swirling gently to combine.
  5. Drizzle lemon juice over the chicken.
  6. Transfer the skillet to the preheated oven and bake for 20-25 minutes until the internal temperature reaches 165°F (75°C).
  7. Garnish with parsley before serving.
