Quick Chipotle-Style Sofritas for Cozy Gatherings

  • 1 block (14 ounces) extra-firm tofu Preferably organic.
  • 2 Tbsp. olive oil
  • 1 small yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tsp. smoked paprika
  • 1 tsp. ground cumin
  • ½ tsp. cayenne pepper Adjust to spice preference.
  • 1 Tbsp. soy sauce or tamari For gluten-free option.
  • 2 Tbsp. tomato paste
  • 1 cup vegetable broth
  • 1 Tbsp. adobo sauce From chipotle peppers in adobo.
  • fresh cilantro for garnish
  • Salt and pepper to taste

Equipment

  • Skillet A large skillet for sautéing and simmering.
  • Kitchen towels For pressing tofu.

Method
 

  1. Press and crumble the tofu, then set it aside.
  2. In a skillet, heat olive oil and sauté the onions until soft. Add minced garlic and cook until fragrant.
  3. Stir in the spices and mix until glossy.
  4. Add crumbled tofu and mix well. Pour in the soy sauce, tomato paste, vegetable broth, and adobo sauce. Simmer for 10-15 minutes.
  5. Season to taste with salt and pepper. Serve garnished with cilantro.

Notes

Pressing the tofu is essential for achieving a great texture. Feel free to customize the spices to your liking!
