One-Pan Balsamic Chicken for Cozy Gatherings

  • 4 pieces boneless skinless chicken breasts
  • 1 cup balsamic vinegar
  • 2 Tbsp. honey
  • 1 Tbsp. Dijon mustard
  • 2 cloves garlic, minced
  • 1 tsp. dried oregano
  • 1 tsp. dried thyme
  • Salt and black pepper, to taste
  • 2 Tbsp. olive oil
  • 2 cups cherry tomatoes, halved
  • 1 piece bell pepper, sliced
  • 1 medium red onion, sliced
  • Fresh basil, for garnish

Method
 

  1. In a large bowl, whisk together the balsamic vinegar, honey, Dijon mustard, minced garlic, oregano, thyme, salt, and black pepper until combined. Add chicken and marinate for at least 30 minutes.
  2. Preheat your oven to 400°F (200°C) and heat olive oil in a large oven-safe skillet over medium heat.
  3. Sear the marinated chicken for about 4-5 minutes on each side until golden-brown.
  4. Add the cherry tomatoes, bell pepper, and red onion around the chicken and pour reserved marinade over everything.
  5. Bake for 20-25 minutes until chicken reaches an internal temperature of 165°F (74°C) and vegetables are tender.
  6. Remove from oven, let sit for a few minutes, and garnish with fresh basil before serving.

Notes

Make sure to let the chicken marinate for extra flavor, and avoid overcrowding the pan while cooking.
