- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the halved Brussels sprouts with sliced garlic, olive oil, salt, and pepper.
- Spread the mixture evenly on a rimmed baking sheet and bake for about 25-30 minutes, tossing halfway through, until the Brussels sprouts are golden and crispy.
- While the sprouts roast, whisk together the fresh lemon juice, Dijon mustard, and chopped parsley in a small bowl.
- Drizzle the Lemon Mustard Parsley Dressing over the warm Brussels sprouts as soon as they come out of the oven.
