Garlic Roasted Brussels Sprouts with Zesty Dressing

  • 1 lb. Brussels sprouts, trimmed and halved
  • 5 cloves garlic, thinly sliced
  • 3 Tbsp. olive oil
  • Salt and pepper to taste
  • 2 Tbsp. fresh lemon juice freshly squeezed for brightness
  • 1 Tbsp. Dijon mustard
  • ¼ cup fresh parsley, finely chopped

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the halved Brussels sprouts with sliced garlic, olive oil, salt, and pepper.
  3. Spread the mixture evenly on a rimmed baking sheet and bake for about 25-30 minutes, tossing halfway through, until the Brussels sprouts are golden and crispy.
  4. While the sprouts roast, whisk together the fresh lemon juice, Dijon mustard, and chopped parsley in a small bowl.
  5. Drizzle the Lemon Mustard Parsley Dressing over the warm Brussels sprouts as soon as they come out of the oven.

Notes

Freshness matters! Always opt for firm, vibrant green Brussels sprouts for the best taste and texture.
