- In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In another bowl, combine the buttermilk, egg, melted butter, and vanilla extract. Whisk until the mixture is smooth.
- Grate your apple directly into the wet mixture.
- Pour the wet ingredients into the dry ingredients and stir gently. The batter should be slightly lumpy.
- Heat a non-stick skillet or griddle over medium heat. Add a small pat of butter, spoon a half-cup of batter onto the skillet, and cook for 2-3 minutes until bubbles form. Flip and cook for another 2-3 minutes until golden brown.
