  • 1 cup all-purpose flour
  • 1 Tbsp. granulated sugar
  • 1 tsp. baking powder
  • ½ tsp. baking soda
  • ¼ tsp. salt
  • 1 cup buttermilk or regular milk with a splash of vinegar
  • 1 large egg
  • 2 Tbsp. unsalted butter, melted
  • 1 tsp. vanilla extract
  • 1 medium apple, cored and grated (such as Honeycrisp or Granny Smith)
  • Extra butter for cooking

Method
 

  1. In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, combine the buttermilk, egg, melted butter, and vanilla extract. Whisk until the mixture is smooth.
  3. Grate your apple directly into the wet mixture.
  4. Pour the wet ingredients into the dry ingredients and stir gently. The batter should be slightly lumpy.
  5. Heat a non-stick skillet or griddle over medium heat. Add a small pat of butter, spoon a half-cup of batter onto the skillet, and cook for 2-3 minutes until bubbles form. Flip and cook for another 2-3 minutes until golden brown.
