Flavorful Butternut Squash Crostini with Goat Cheese

Roasted butternut squash paired with whipped goat cheese on toasted baguette slices creates a delightful appetizer perfect for autumn gatherings.

  • 1 medium butternut squash, peeled and cut into 1-inch cubes
  • 1 Tbsp. olive oil
  • Salt and freshly cracked pepper, to taste
  • 1 Tbsp. fresh sage, chopped
  • 8 oz. goat cheese, at room temperature
  • 1 Tbsp. honey
  • Balsamic reduction (optional)

Method
 

  1. Preheat your oven to 400°F (200°C). Spread the butternut squash cubes on a large baking sheet and drizzle with olive oil. Sprinkle with salt and freshly cracked pepper, then toss until well-coated. Roast in the oven for 25-30 minutes or until tender and slightly caramelized.
  2. In a mixing bowl, combine room-temperature goat cheese, honey, and chopped sage. Use a hand mixer or whisk to whip until light and fluffy.
  3. Arrange baguette slices on a baking sheet. Drizzle lightly with olive oil and toast in the oven for about 5-7 minutes until golden brown and crisp.
  4. Spread a generous dollop of whipped goat cheese onto each toasted baguette slice, then top it with a few pieces of roasted squash. Garnish with a whole sage leaf.
  5. If desired, drizzle balsamic reduction over each crostini and serve at room temperature.

Notes

For best flavor experience, serve crostini at room temperature. You can experiment with toppings like pomegranate seeds or chopped nuts.
