  • 2 oz tequila (blanco preferred)
  • 1 oz freshly squeezed clementine juice (about 2 clementines)
  • 1 oz rosemary simple syrup (homemade recommended)
  • 1 oz fresh lime juice
  • ice cubes
  • 2 tablespoon sugar (for rim)
  • 1 teaspoon ground cinnamon (for rim)
  • 2 tablespoon pomegranate seeds (for garnish)
  • fresh rosemary sprigs (for garnish)

Instructions

  • Prepare the rosemary simple syrup by combining water, sugar, and rosemary in a saucepan, bringing it to a simmer. Strain after 30 minutes.
  • Mix sugar and ground cinnamon on a plate. Rim your glass with clementine juice and dip into the mixture.
  • In a cocktail shaker filled with ice, combine tequila, clementine juice, rosemary simple syrup, and lime juice. Shake for 15 seconds.
  • Strain the mixture into the prepared glass filled with ice.
  • Garnish with pomegranate seeds and a sprig of rosemary.
  • Sip slowly and enjoy!

Notes

The rosemary simple syrup can be made ahead and stored in the fridge for up to two weeks.
