Method
- Preheat your oven to 350°F (175°C) and grease a mini loaf pan or line it with parchment paper for easy removal.
- In a large mixing bowl, mash the ripe bananas with a fork until smooth. Stir in the melted butter.
- Beat in the sugar, egg, and vanilla extract until well-combined and glossy.
- Sprinkle the baking soda and salt over the banana mixture. Fold in the flour until just blended.
- Gently fold in the mini chocolate chips until evenly distributed.
- Pour the batter into your mini loaf pan(s). Bake for 20 to 25 minutes or until golden brown and a toothpick comes out clean.
- Let the bread cool in the pan for 10 minutes before transferring to a wire rack.
