Ingredients

  • 2 to 3 ripe bananas mashed (about 1 cup)
  • cup melted butter
  • ½ cup sugar (or brown sugar for a richer flavor)
  • 1 large egg beaten
  • 1 teaspoon vanilla extract
Group: Dry Ingredients
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 cup all-purpose flour
  • ½ cup mini chocolate chips

Equipment

  • Mini loaf pan
  • Mixing bowl

Method
 

  1. Preheat your oven to 350°F (175°C) and grease a mini loaf pan or line it with parchment paper for easy removal.
  2. In a large mixing bowl, mash the ripe bananas with a fork until smooth. Stir in the melted butter.
  3. Beat in the sugar, egg, and vanilla extract until well-combined and glossy.
  4. Sprinkle the baking soda and salt over the banana mixture. Fold in the flour until just blended.
  5. Gently fold in the mini chocolate chips until evenly distributed.
  6. Pour the batter into your mini loaf pan(s). Bake for 20 to 25 minutes or until golden brown and a toothpick comes out clean.
  7. Let the bread cool in the pan for 10 minutes before transferring to a wire rack.
