Deliciously Spiced Baked Pumpkin Muffins

These delightful muffins are infused with warm spices and pure pumpkin, perfect for fall gatherings or cozy evenings.

Ingredients
  

Group: Wet Ingredients
  • 1 cup pure pumpkin puree not pumpkin pie filling
  • ½ cup vegetable oil
  • ½ cup brown sugar
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 tsp. vanilla extract
Group: Dry Ingredients
  • 1 ½ cups all-purpose flour
  • 1 tsp. baking soda
  • ½ tsp. baking powder
  • 1 tsp. ground cinnamon
  • ½ tsp. ground nutmeg
  • ¼ tsp. ground ginger
  • ¼ tsp. salt
  • Optional: chocolate chips or nuts for added texture

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine pumpkin puree, vegetable oil, brown sugar, granulated sugar, eggs, and vanilla extract.
  3. In a separate bowl, whisk together the flour, baking soda, baking powder, spices, and salt.
  4. Gradually fold the dry ingredients into the wet ingredients.
  5. Fold in chocolate chips or nuts if desired.
  6. Grease a muffin tin or line it with paper liners.
  7. Fill each cup about two-thirds full with the batter.
  8. Bake for 18-20 minutes, until golden brown and a toothpick comes out clean.
  9. Let cool in the pan for a few minutes before transferring to a wire rack.

Notes

Keep an eye on the muffins to avoid overbaking; they should be moist and soft in the center.
