- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the sliced peaches, granulated sugar, lemon juice, cornstarch, and vanilla extract. Mix gently and let marinate for about 10 minutes.
- In another bowl, whisk together the flour, brown sugar, baking powder, baking soda, and salt. Pour in the melted butter and buttermilk, stirring until just combined; the batter should be lumpy.
- Grease a 9x13 inch baking dish and pour the batter into the bottom, spreading it evenly. Spoon the peach mixture over the batter.
- Sprinkle the sliced almonds generously over the top.
- Bake for 35 to 40 minutes, until golden brown and the center has a slight jiggle.
- Let the cobbler cool for a few minutes before serving. It’s excellent on its own or with vanilla ice cream or whipped cream.
Notes
Ensure to use ripe peaches for the best flavor and texture. A pinch of cinnamon or nutmeg in the peach filling can enhance the taste.
