Delicious Peach Cobbler with Almond Topping

Ingredients

  • 6 cups ripe peaches, peeled and sliced
  • 1 cup granulated sugar
  • 2 Tbsp. lemon juice
  • 1 Tbsp. cornstarch
  • 1 tsp. vanilla extract

  • 1 ½ cups all-purpose flour
  • ½ cup brown sugar
  • 1 tsp. baking powder
  • ½ tsp. baking soda
  • ¼ tsp. salt
  • ½ cup unsalted butter, melted
  • 1 cup buttermilk
Group: Almond Topping
  • ½ cup sliced almonds

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the sliced peaches, granulated sugar, lemon juice, cornstarch, and vanilla extract. Mix gently and let marinate for about 10 minutes.
  3. In another bowl, whisk together the flour, brown sugar, baking powder, baking soda, and salt. Pour in the melted butter and buttermilk, stirring until just combined; the batter should be lumpy.
  4. Grease a 9x13 inch baking dish and pour the batter into the bottom, spreading it evenly. Spoon the peach mixture over the batter.
  5. Sprinkle the sliced almonds generously over the top.
  6. Bake for 35 to 40 minutes, until golden brown and the center has a slight jiggle.
  7. Let the cobbler cool for a few minutes before serving. It’s excellent on its own or with vanilla ice cream or whipped cream.

Notes

Ensure to use ripe peaches for the best flavor and texture. A pinch of cinnamon or nutmeg in the peach filling can enhance the taste.
