Delicious No Bake Superfood Brownies

A simple, no-bake treat made from wholesome ingredients that everyone will love.

Ingredients

  • 1 cup pitted dates (Medjool recommended)
  • 1 cup raw walnuts (or preferred raw nuts)
  • ½ cup cacao powder
  • ¼ cup maple syrup
  • 1 tsp. vanilla extract (pure for best flavor)
  • ¼ tsp. sea salt
  • ½ cup rolled oats (gluten-free for full gluten-free option)
  • Optional toppings: shredded coconut, chia seeds, or dark chocolate chips

Method
 

  1. Start by adding your pitted Medjool dates and raw walnuts into a food processor. Pulse until the mixture resembles coarse crumbs.
  2. Sprinkle in the cacao powder, maple syrup, vanilla extract, and sea salt. Pulse again until everything is well combined.
  3. Now, add in your rolled oats. Pulse a few more times until they're mixed in but still have some texture.
  4. Line an 8x8-inch square pan with parchment paper, transfer the mixture into the pan and press it down tightly to create compact layers.
  5. Let your pan sit in the fridge for at least 2 hours to firm up.
  6. Once set, lift the brownies out of the pan using the parchment overhang and slice into squares.

Notes

These brownies can be stored in the refrigerator for up to one week and freeze well!
