Delicious Hearty Lentil Burgers

Hearty, nutritious lentil burgers that are easy to make, perfect for gatherings around the table.

  • 1 cup dry green or brown lentils
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tsp. ground cumin
  • 1 tsp. smoked paprika
  • ½ cup breadcrumbs (panko recommended)
  • ½ cup grated carrots
  • 2 Tbsp. soy sauce (or tamari for gluten-free)
  • 1 Tbsp. olive oil (plus more for frying)
  • Salt and pepper, to taste
  • Fresh parsley or cilantro (optional, for garnish)

Method
 

  1. Start by rinsing the lentils under cold water, then place them in a medium saucepan. Cover with about 3 cups of water and bring to a gentle boil. Lower heat and let simmer for about 20-25 minutes until tender but not mushy. Drain excess liquid and let cool.
  2. In a skillet over medium heat, add a tablespoon of olive oil. Once it shimmers, toss in the chopped onion and minced garlic. Sauté until onions are translucent, about 5 minutes.
  3. In a large bowl, combine lentils, sautéed onions and garlic, grated carrots, ground cumin, smoked paprika, soy sauce, and breadcrumbs. Mash together until well combined but still has some texture. Season with salt and pepper to taste.
  4. Form the mixture into burger patties, aiming for about ½ inch thick. You should make around 6 to 8 patties.
  5. Return skillet to medium heat, add a little more olive oil. Once hot, place patties in the skillet (may need to do this in batches). Cook for about 4-5 minutes on each side until golden brown and crispy.
  6. Serve these delightful burgers on buns, topped with fresh greens, avocado, or any favorite condiments.

Notes

Avoid overcooking lentils to maintain texture. Allow mixture to cool before shaping patties.
