Delicious Easy Gluten-Free Monster Cookies

These Easy Gluten-Free Monster Cookies are deliciously vegan, flourless, and perfect for the holiday season!

Ingredients
  

Group: Wet Ingredients
  • 1 cup creamy natural peanut butter (or almond butter, if you prefer)
  • ½ cup pure maple syrup
  • 1 tsp. pure vanilla extract
Group: Dry Ingredients
  • ½ tsp. baking soda
  • ¼ tsp. salt
  • ½ cup rolled oats (ensure they are certified gluten-free)
  • ½ cup dairy-free chocolate chips
  • ¼ cup M&M’s (optional for color and sweetness)

Method
 

  1. Begin by preheating your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine the peanut butter, maple syrup, and vanilla. Whisk these ingredients together until creamy.
  3. Sprinkle in the baking soda and salt, whisking until everything is well combined before adding the oats.
  4. Using a spatula, gently fold in the oats, chocolate chips, and M&M's if using.
  5. Drop the dough onto the prepared baking sheet, leaving space between each cookie.
  6. Bake for 10-12 minutes until golden around the edges but soft in the center. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

These cookies should be slightly undercooked when removed from the oven and will continue to set as they cool.
