Delicious Chocolate Chip Muffins for Cozy Mornings

Ingredients

  • 1 ½ cups all-purpose flour
  • 1 tsp. baking powder
  • ½ tsp. baking soda
  • ½ tsp. salt
Group: Wet Ingredients
  • ½ cup unsalted butter, melted Slightly cooled
  • ¾ cup brown sugar, packed
  • ¼ cup granulated sugar
  • 2 large eggs
  • 1 tsp. vanilla extract
  • ¾ cup buttermilk Or a DIY mix of milk and vinegar
Group: Mix-ins
  • 1 cup semisweet chocolate chips

Equipment

  • Oven Preheat to 350°F (175°C)
  • 12 Muffin tin Lined with paper liners or greased
  • Medium bowl
  • Large bowl
  • Spatula For folding ingredients

Method
 

  1. Preheat your oven to 350°F (175°C). Prepare a 12-cup muffin tin by lining it with paper liners or greasing it well.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a large bowl, combine melted butter, brown sugar, and granulated sugar. Whisk until smooth. Add the eggs, one at a time, and the vanilla extract, mixing until creamy. Then, gently stir in the buttermilk.
  4. Carefully fold the dry ingredients into the wet mixture using a spatula, being sure not to over mix. Fold in the chocolate chips last.
  5. Scoop the batter into the prepared muffin tins, filling each cup about three-quarters full.
  6. Bake for 18-20 minutes until the tops are golden brown and a toothpick comes out clean or with a few melted chocolatey crumbs.
