Crispy Air Fryer Zucchini Bites

  • 2 medium zucchinis, preferably organic
  • 2 Tbsp. olive oil, preferably extra virgin
  • 1 tsp. garlic powder or freshly minced garlic, if you prefer
  • 1 tsp. onion powder
  • 1 tsp. Italian seasoning
  • Salt to taste
  • Pepper to taste
  • Grated Parmesan cheese optional

Method
 

  1. Wash zucchini under cold water, pat dry, and slice into ¼-inch thick rounds or half-moons.
  2. In a large mixing bowl, drizzle olive oil over zucchini and sprinkle with garlic powder, onion powder, Italian seasoning, salt, and pepper. Toss until well-coated.
  3. Preheat air fryer to 400°F for about 5 minutes.
  4. Place zucchini in a single layer in air fryer basket. Air fry for 10-12 minutes, shaking halfway through, until golden brown and crispy.
  5. If using Parmesan cheese, sprinkle it halfway through cooking for a cheesy finish.
  6. Carefully remove zucchini from air fryer and serve hot, optionally with a yogurt dip.

Notes

Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the air fryer to restore crispness.
