Creamy Cottage Cheese Popsicles for Holidays

Make creamy and delicious Cottage Cheese Popsicles by blending cottage cheese, fresh fruit, honey, and vanilla, then freezing them in molds for a refreshing treat.

  • 2 cups cottage cheese, whole milk
  • 1 cup fresh fruit (berries, mango, or peaches)
  • 2 Tbsp. honey or maple syrup
  • 1 tsp. vanilla extract
  • a pinch of salt
  • ¼ cup full-fat yogurt or coconut milk (optional)

  • Popsicle molds
  • Measuring cups

Method
 

  1. Start by washing and preparing your fresh fruit. For berries, just set them aside, but if you're using larger fruits like mangoes or peaches, peel and chop them into small chunks.
  2. In a sturdy blender or food processor, combine the cottage cheese, honey or maple syrup, vanilla extract, and a pinch of salt. Blend until the mixture is smooth and creamy. If you want a little more creaminess or tang, feel free to add the yogurt or coconut milk.
  3. Gently fold in your prepared fruit. The vibrant colors of the fruit against the creamy base create a gorgeous contrast.
  4. Carefully pour the mixture into your popsicle molds, filling them about ¾ full. Insert sticks and freeze overnight for the best results.
  5. Once frozen, run warm water over the outside of the molds to help release the popsicles. Serve and enjoy!
