  • 2 cups cooked chicken, shredded (preferably rotisserie chicken)
  • 1 cup cottage cheese (full-fat for creaminess)
  • ½ cup celery, finely chopped
  • cup red onion, finely diced
  • ½ cup Greek yogurt (for a tangy flavor)
  • 1 Tbsp. Dijon mustard (for extra kick)
  • 1 Tbsp. fresh parsley, chopped (or to taste)
  • Salt and pepper (to taste)
  • Sliced almonds or walnuts (optional, for crunch)

Method
 

  1. In a large mixing bowl, combine the shredded chicken, cottage cheese, celery, and red onion.
  2. In a separate small bowl, whisk together the Greek yogurt, Dijon mustard, and chopped parsley until smooth.
  3. Pour the yogurt mixture over the chicken combination. Fold everything together until well incorporated.
  4. Season generously with salt and pepper and adjust to taste.
  5. If desired, add sliced almonds or walnuts and fold gently.
  6. Let the salad chill in the refrigerator for at least an hour before serving.

Notes

This salad can be made a day in advance. It's essential to chill for flavor development.
