  • 2 whole ripe bananas
  • 1 cup cottage cheese, preferably full-fat
  • 2 Tbsp. honey or maple syrup, to taste
  • 1 tsp. vanilla extract
  • 1 pinch salt

Method
 

  1. Peel and slice the ripe bananas, then freeze the slices on a parchment-lined baking sheet for at least 2 hours or until solid.
  2. In a food processor, combine the frozen banana slices, cottage cheese, honey or maple syrup, vanilla extract, and a pinch of salt. Blend until smooth and creamy.
  3. Transfer the mixture to a shallow container and freeze for 2-3 hours until firm.
  4. Scoop into bowls and top with optional toppings like dark chocolate chips, nuts, or fresh berries before serving.

Notes

Make sure to use ripe bananas for sweetness but avoid overripe ones that might affect texture. For best results, blend until completely smooth.
