  • 1 lb. boneless, skinless chicken breasts
  • 1 cup uncooked orzo pasta
  • 1 cup chicken broth (preferably low-sodium)
  • 1 cup heavy cream
  • 1 cup sun-dried tomatoes in oil, drained and chopped
  • 2 cups baby spinach (the fresher, the better)
  • 2 cloves garlic, minced
  • 1 tsp. dried Italian herbs (like oregano and basil)
  • Salt and pepper to taste
  • Freshly grated Parmesan cheese for garnish
  • Fresh basil leaves for a fragrant finish

Method
 

  1. Place the boneless, skinless chicken breasts at the bottom of your slow cooker.
  2. In a mixing bowl, whisk together the chicken broth, heavy cream, minced garlic, salt, pepper, and dried herbs.
  3. Gently pour your creamy mixture over the chicken in the slow cooker. Then, sprinkle the chopped sun-dried tomatoes on top.
  4. Cover the slow cooker and set it to low for 6-7 hours or high for 3-4 hours.
  5. About 30 minutes before serving, stir in the uncooked orzo and baby spinach.
  6. Once everything is cooked, serve the creamy mixture right from the slow cooker. Garnish with freshly grated Parmesan cheese and torn basil leaves.

Notes

Do not overcook the chicken to avoid dryness and always add orzo during the last cooking phase for the best texture.
