Method
- In a mixing bowl, combine the rolled oats, milk, Greek yogurt, and pumpkin puree.
- Whisk in the maple syrup, pumpkin pie spice, vanilla extract, and a pinch of salt.
- Stir until the mixture is fully combined and smooth. The oats will soak up the flavors overnight.
- Transfer the mixture into two jars or containers. Leave a little space at the top for toppings.
- Seal the jars and refrigerate overnight (or for at least 4 hours).
- In the morning, give the oats a good stir. If they seem thick, add a splash more milk.
- Top with your choice of chopped pecans, a swirl of whipped cream, or an extra sprinkle of cinnamon before serving.
