Cozy Pumpkin Pie Overnight Oats

A delightful make-ahead breakfast featuring oats, pumpkin puree, and warm spices, perfect for the autumn season.

  • ½ cup rolled oats
  • ½ cup milk (or almond milk for a dairy-free version)
  • ½ cup plain Greek yogurt
  • ¼ cup pure pumpkin puree
  • 2 Tbsp. maple syrup (or more if you like it sweeter)
  • ½ tsp. pumpkin pie spice
  • ¼ tsp. vanilla extract
  • Pinch salt
Toppings (Optional)
  • chopped pecans
  • dollop of whipped cream
  • sprinkle of cinnamon

Method
 

  1. In a mixing bowl, combine the rolled oats, milk, Greek yogurt, and pumpkin puree.
  2. Whisk in the maple syrup, pumpkin pie spice, vanilla extract, and a pinch of salt.
  3. Stir until the mixture is fully combined and smooth. The oats will soak up the flavors overnight.
  4. Transfer the mixture into two jars or containers. Leave a little space at the top for toppings.
  5. Seal the jars and refrigerate overnight (or for at least 4 hours).
  6. In the morning, give the oats a good stir. If they seem thick, add a splash more milk.
  7. Top with your choice of chopped pecans, a swirl of whipped cream, or an extra sprinkle of cinnamon before serving.

Notes

The oats must sit overnight to achieve the perfect creamy texture.
