  • 1 lb. potato gnocchi store-bought or homemade
  • 2 medium yellow onions, thinly sliced
  • 2 Tbsp. unsalted butter
  • 1 Tbsp. olive oil
  • 1 cup Gruyere cheese, shredded good quality
  • ½ cup heavy cream
  • Salt and pepper to taste
  • Fresh thyme leaves for garnish (optional)

Method
 

  1. In a large skillet, melt the butter and olive oil over medium heat. Add the sliced onions and stir occasionally, cooking for about 15-20 minutes until they are caramelized.
  2. While the onions are caramelizing, bring a large pot of salted water to a boil. Add the gnocchi and cook until they float, about 2-3 minutes. Drain and set aside.
  3. Lower the heat and stir in the heavy cream to the caramelized onions. Add the cooked gnocchi and toss gently with shredded Gruyere cheese until melted and well-combined.
  4. Season with salt and pepper, adjust to taste, and serve garnished with fresh thyme leaves.

Notes

Ensure that the cream and cheese are at room temperature for easy melding into the sauce.
