- In a large skillet, melt the butter and olive oil over medium heat. Add the sliced onions and stir occasionally, cooking for about 15-20 minutes until they are caramelized.
- While the onions are caramelizing, bring a large pot of salted water to a boil. Add the gnocchi and cook until they float, about 2-3 minutes. Drain and set aside.
- Lower the heat and stir in the heavy cream to the caramelized onions. Add the cooked gnocchi and toss gently with shredded Gruyere cheese until melted and well-combined.
- Season with salt and pepper, adjust to taste, and serve garnished with fresh thyme leaves.
