  • 2 cups cooked chicken (rotisserie is best for ease)
  • 4 cups broccoli florets (fresh or frozen)
  • 1 can (10.5 ounces) cream of mushroom soup
  • 1 cup mayonnaise
  • 1 tablespoon lemon juice
  • 1 teaspoon curry powder
  • 1 cup shredded cheddar cheese (sharp preferred)
  • 1 cup breadcrumbs (panko for extra crunch)
  • 2 tablespoons butter

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a medium saucepan over medium heat, combine the cream of mushroom soup, mayonnaise, lemon juice, and curry powder. Whisk until smooth.
  3. In a large mixing bowl, combine the cooked chicken and broccoli. Pour the creamy sauce over the chicken and broccoli, mixing thoroughly.
  4. Spoon the mixture into your prepared 9x13-inch baking dish.
  5. Sprinkle the shredded cheddar cheese generously over the top.
  6. In a small bowl, combine the breadcrumbs and melted butter, stirring until well-coated. Spread over the cheese layer.
  7. Bake for about 30-35 minutes, until the top is golden brown and the filling is bubbly.
  8. Let the dish rest for about 5 minutes before serving.
