- In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and sauté until it softens and turns translucent, about 3-4 minutes.
- Increase the heat slightly and add the ground turkey. Break it apart with a wooden spoon and cook until browned, about 6-7 minutes.
- Stir in the garlic and diced bell pepper, cooking for 2-3 minutes until fragrant.
- Sprinkle the chili powder and cumin over the mixture, stirring to coat evenly. Let them bloom for about a minute.
- Add the tomatoes, kidney beans, black beans, and corn. Stir to combine and season with salt and pepper.
- Bring the chili to a gentle boil, then reduce heat to low. Cover and simmer for 20-30 minutes, stirring occasionally.
- Taste and adjust seasonings. Ladle into bowls and garnish with fresh cilantro.
