Spicy Peri Peri Chicken Wings

  • 2 lb. chicken wings
  • 4 Tbsp. peri peri sauce Use a brand with good heat and flavor, like Nando’s.
  • 2 Tbsp. olive oil
  • Salt and pepper To taste.
  • Chopped fresh parsley For garnish.
  • Lemon wedges For squeezing over before serving.

  • Oven Preheat oven to 425°F (220°C).
  • Large bowl For marinating wings.
  • Baking sheet Line with parchment paper.
  • Wire rack For even cooking.

Method
 

  1. Start by rinsing your chicken wings under cold water and patting them dry with paper towels. Toss the wings with olive oil, salt, pepper, and peri peri sauce until well coated.
  2. Allow them to marinate for at least 30 minutes, or for best flavor, 2-4 hours or overnight in the fridge.
  3. While the wings are marinating, preheat your oven to 425°F (220°C).
  4. Line a baking sheet with parchment or foil and place a wire rack on top. Lay wings in a single layer.
  5. Bake for about 35-40 minutes, flipping halfway through.
  6. Turn your oven to broil for the last few minutes to achieve a crispy, charred finish.
  7. Let cool for a minute, then garnish with parsley and serve with lemon wedges.

Notes

Marinating the chicken wings well in advance maximizes the flavor. Ensuring the oven is preheated is key to achieving that perfect crunch!
