  • 1 French baguette Freshly baked For the best texture
  • 2 cups ripe cherry tomatoes Mixed varieties for color
  • 2 cloves garlic Finely minced
  • ¼ cup fresh basil leaves Torn or chopped
  • 2 Tbsp. balsamic vinegar The darker, the better
  • 2 Tbsp. extra-virgin olive oil Quality makes a difference
  • Salt and pepper To taste

Equipment

  • Baking sheet
  • Medium bowl

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Slice the French baguette into ½-inch thick diagonal slices.
  3. Arrange the slices on a baking sheet and brush each side lightly with extra-virgin olive oil. Toast for about 5-7 minutes until golden brown.
  4. While the bread toasts, chop your cherry tomatoes in half and combine them with garlic, basil, balsamic vinegar, olive oil, salt, and pepper in a medium bowl. Toss gently.
  5. Once the bread is toasted, spoon the tomato mixture onto each slice just before serving.
  6. Arrange the bruschetta on a serving platter and enjoy.

Notes

For the best flavor, allow the tomato mixture to sit for at least 10 minutes before assembling.
