Quick and Flavorful Spicy Peanut Butter Noodles

In just ten minutes, whip up these spicy peanut butter noodles by cooking dried noodles and mixing them with a flavorful peanut sauce.

Ingredients
  

Group: Noodles
  • 200 g dried noodles Rice noodles preferred
Group: Sauce
  • 3 Tbsp. creamy peanut butter Natural, unsweetened recommended
  • 1-2 Tbsp. soy sauce Low-sodium if preferred
  • 1-2 tsp. chili paste Sriracha or gochujang work well
  • 1 Tbsp. lime juice Freshly squeezed
  • 1-2 tsp. sesame oil For a nutty finish
  • 1 Tbsp. honey or maple syrup To balance heat
Optional Toppings
  • chopped scallions
  • sesame seeds
  • crushed peanuts

Equipment

  • Pot For boiling noodles
  • Large bowl For mixing sauce

Method
 

  1. Start by boiling a pot of water. Add the dried noodles and cook according to the package instructions, usually around 4-5 minutes for rice noodles until al dente.
  2. While the noodles are cooking, whisk together the peanut butter, soy sauce, chili paste, lime juice, sesame oil, and honey in a large bowl.
  3. Once the noodles are cooked, drain them and rinse under cold water to stop the cooking. Add warm noodles to the bowl with the sauce and toss until coated.
  4. Transfer the noodles to a serving dish and sprinkle with toppings like scallions, sesame seeds, or crushed peanuts.

Notes

These noodles can be customized and stored in the fridge for up to 3 days. Reheat with a splash of water or sesame oil.
