Method
- Start by boiling a pot of water. Add the dried noodles and cook according to the package instructions, usually around 4-5 minutes for rice noodles until al dente.
- While the noodles are cooking, whisk together the peanut butter, soy sauce, chili paste, lime juice, sesame oil, and honey in a large bowl.
- Once the noodles are cooked, drain them and rinse under cold water to stop the cooking. Add warm noodles to the bowl with the sauce and toss until coated.
- Transfer the noodles to a serving dish and sprinkle with toppings like scallions, sesame seeds, or crushed peanuts.
Notes
These noodles can be customized and stored in the fridge for up to 3 days. Reheat with a splash of water or sesame oil.
