Indulgent Chocolate Chip Baked Oats

  • 2 cups rolled oats use certified gluten-free if needed
  • 2 ripe bananas, mashed
  • 1 cup almond milk or milk of choice
  • ½ cup Greek yogurt try vanilla for an extra kick!
  • ¼ cup honey or maple syrup local honey adds a lovely floral note
  • 1 tsp. baking powder
  • 1 tsp. vanilla extract pure vanilla extract preferred
  • ½ tsp. ground cinnamon
  • 1 cup dark chocolate chips higher cocoa content for richer flavor
  • a pinch salt

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the mashed bananas, almond milk, Greek yogurt, honey or maple syrup, vanilla extract, and salt. Whisk until smooth and creamy.
  3. In another bowl, whisk together the rolled oats, baking powder, and ground cinnamon.
  4. Pour the dry ingredients into the bowl of wet ingredients. Fold gently until well mixed.
  5. Gently fold in the dark chocolate chips.
  6. Pour the mixture into a greased or lined 9x9-inch baking dish. Bake for 25-30 minutes, until golden brown and a toothpick inserted comes out with a few moist crumbs.
  7. Let cool for about 10 minutes before slicing. Serve warm with maple syrup or yogurt if desired.
