- In a skillet over medium heat, add diced bacon and cook until crisp. Stir in kimchi, brown sugar, rice vinegar, sesame oil, soy sauce, and ginger. Cook for about 10-15 minutes until sticky.
- Combine ground chicken with gochujang, green onions, garlic, honey, soy sauce, sesame oil, salt, and pepper in a bowl. Mix gently and shape into four patties.
- Heat oil in a skillet over medium-high. Sear patties for 5-6 minutes on each side until golden brown and cooked to 165°F.
- Toast hamburger buns and assemble with patties and kimchi bacon jam. Serve warm.
