- Prepare the rosemary simple syrup by combining water, sugar, and rosemary in a saucepan, bringing it to a simmer. Strain after 30 minutes.
- Mix sugar and ground cinnamon on a plate. Rim your glass with clementine juice and dip into the mixture.
- In a cocktail shaker filled with ice, combine tequila, clementine juice, rosemary simple syrup, and lime juice. Shake for 15 seconds.
- Strain the mixture into the prepared glass filled with ice.
- Garnish with pomegranate seeds and a sprig of rosemary.
- Sip slowly and enjoy!
Notes
The rosemary simple syrup can be made ahead and stored in the fridge for up to two weeks.
