  • 1 cup dark chocolate chips the higher the cocoa content, the richer the flavor
  • sea salt optional but recommended for garnish
  • optional toppings chopped banana, crushed nuts, drizzle of honey

  • Parchment-lined baking sheet

Method
 

  1. Melt dark chocolate chips in a microwave-safe bowl in 30-second intervals, stirring until smooth, or use a double boiler.
  2. Spread a generous layer of creamy peanut butter on top of each rice cake.
  3. Dip each peanut butter-covered rice cake into the melted chocolate, ensuring even coating, and let excess drip off.
  4. Sprinkle with sea salt and chill in the refrigerator for about 30 minutes to set.
  5. Once set, add your favorite toppings before serving.
