Delicious Spicy Chicken Sandwich

A homemade spicy chicken sandwich with crispy fried chicken thighs, marinated in buttermilk and spices, served on toasted buns.

  • 2 lb. boneless, skinless chicken thighs
  • 1 cup buttermilk
  • 1 tsp. smoked paprika
  • 1 tsp. cayenne pepper adjust for spice preference
  • ½ tsp. garlic powder
  • Salt and pepper to taste
  • 1 cup all-purpose flour
  • ½ tsp. baking powder
  • Oil for frying canola or peanut oil recommended
  • 4 pieces burger buns toasted
  • Lettuce for garnish
  • Tomato slices for garnish
  • Pickles for garnish
  • Spicy mayonnaise or sauce your favorite

Equipment

  • Deep skillet Cast iron recommended
  • Mixing bowls
  • Meat thermometer
  • Paper towels For draining excess oil

Method
 

  1. Marinate the chicken thighs in buttermilk, smoked paprika, cayenne pepper, garlic powder, salt, and pepper for at least 1 hour.
  2. In a separate bowl, whisk together flour, baking powder, and a pinch of salt.
  3. Heat oil in a deep skillet over medium-high heat until shimmering.
  4. Dredge chicken in seasoned flour and fry for 5-7 minutes on each side until golden brown and cooked through (internal temperature 165°F).
  5. Let chicken rest on paper towels to absorb excess oil.
  6. Assemble the sandwich with spicy mayonnaise, lettuce, tomato, fried chicken, and pickles on toasted buns.
  7. Serve with your favorite side and enjoy!

Notes

For optimal flavor and juiciness, do not skip the marination step!
