Ingredients

Group: Halloumi Kebabs
  • 300 g halloumi, cut into 1-inch cubes
  • 1 large red bell pepper, cut into 1-inch pieces
  • 1 large zucchini, sliced into thick half-moons
  • 1 medium red onion, cut into chunks
  • 2 Tbsp. olive oil
  • Salt and pepper, to taste
Group: Chilli Sauce
  • 2 Tbsp. olive oil
  • 2 cloves garlic, minced
  • 2 red chillies, finely chopped Adjust to your heat preference.
  • 1 Tbsp. honey
  • 1 large lime, juiced
  • Salt, to taste
  • Fresh coriander leaves, for garnish

Equipment

  • Grill or grill pan
  • Small saucepan
  • Skewers Soak wooden skewers in water for 30 minutes if using.

Method

  1. In a bowl, combine olive oil, salt, and pepper. Add the halloumi cubes and gently toss until well-coated. Let marinate for about 15 minutes.
  2. Prepare the veggies. On a skewer, thread the marinated halloumi with red bell pepper, zucchini, and red onion.
  3. In a small saucepan, heat olive oil over medium heat. Add minced garlic and chopped chillies, sauté for 1-2 minutes until fragrant.
  4. Stir in honey and lime juice. Let the sauce bubble gently, thickening slightly for about 3-4 minutes, and add a pinch of salt.
  5. Preheat grill or grill pan over medium-high heat.
  6. Grill kebabs for 10-15 minutes, turning occasionally until halloumi is crispy and golden, and veggies are tender.
  7. Remove kebabs from the grill, drizzle with spicy chilli sauce, and garnish with fresh coriander leaves before serving.

Notes

Serve immediately for the best texture. Pair with tzatziki for a milder option or additional sides for a complete appetizer spread.
