Ingredients

Group: Meat and Beans
  • 1 lb. ground beef (prefer lean for better texture)
  • 1 packet taco seasoning mix (homemade for an extra flavor boost)
  • 1 can black beans drained and rinsed
Group: Vegetables
  • 1 cup iceberg lettuce chopped
  • 1 cup cherry tomatoes halved
  • 1 cup corn kernels
Group: Dairy and Extras
  • 1 cup shredded cheddar cheese (sharp for robust flavor)
  • 1 cup sour cream (or Greek yogurt for a healthier twist)
  • 1 cup Doritos crushed
  • Optional toppings avocados, jalapeños, or cilantro

Method

  1. In a large skillet over medium heat, add your ground beef. Cook until it’s no longer pink, breaking it apart as it browns. Sprinkle in the taco seasoning and a splash of water, stir until well-combined. Simmer for about 5 minutes.
  2. While the meat is cooking, wash and chop the iceberg lettuce into bite-sized pieces. Halve the cherry tomatoes.
  3. In a large bowl, layer the chopped lettuce, cherry tomatoes, black beans, corn, and the seasoned ground beef once it has cooled slightly. Gently toss together.
  4. Fold in the shredded cheddar cheese and sour cream. Sprinkle the crushed Doritos on top just before serving.

Notes

Serve immediately to maintain the crunch of the Doritos. You can also serve the Doritos on the side.
