- Preheat the oven to 400°F (200°C). Lay bacon slices on a rimmed baking sheet without overlapping. Bake for 15-20 minutes, watching closely until golden-brown and crispy.
- In a medium mixing bowl, combine flour, sugar, baking powder, and salt. Whisk until well-blended.
- In another bowl, whisk together milk, egg, melted butter, and vanilla extract. Pour this wet mixture into the dry ingredients and fold gently until just combined.
- Heat a non-stick skillet over medium heat. Add a small pat of butter, then pour ¼ cup of batter onto the skillet. Cook until bubbles form and edges look set, about 2-3 minutes, then flip and cook until golden-brown.
- Serve pancakes hot alongside crispy bacon, drizzled with maple syrup.
