Ingredients

Group: For the Pancakes
  • 1 cup all-purpose flour
  • 2 Tbsp. granulated sugar
  • 1 Tbsp. baking powder
  • ½ tsp. salt
  • 1 cup whole milk
  • 1 large egg
  • 2 Tbsp. unsalted butter, melted
  • 1 tsp. vanilla extract
Group: For the Bacon
  • 4-6 slices thick-cut bacon

Equipment

  • Oven
  • Mixing bowl
  • Non-stick skillet
  • Ladle

Method

  1. Preheat the oven to 400°F (200°C). Lay bacon slices on a rimmed baking sheet without overlapping. Bake for 15-20 minutes, watching closely until golden-brown and crispy.
  2. In a medium mixing bowl, combine flour, sugar, baking powder, and salt. Whisk until well-blended.
  3. In another bowl, whisk together milk, egg, melted butter, and vanilla extract. Pour this wet mixture into the dry ingredients and fold gently until just combined.
  4. Heat a non-stick skillet over medium heat. Add a small pat of butter, then pour ¼ cup of batter onto the skillet. Cook until bubbles form and edges look set, about 2-3 minutes, then flip and cook until golden-brown.
  5. Serve pancakes hot alongside crispy bacon, drizzled with maple syrup.

Notes

For best results, avoid overmixing the batter and let it rest for about 5 minutes before cooking.
