  • 400 g gnocchi, store-bought or homemade
  • 1 bell pepper, diced red or yellow
  • 1 courgette, sliced
  • 1 red onion, cut into wedges
  • 150 g cherry tomatoes, halved
  • 150 g chorizo, sliced into rounds
  • 3 Tbsp. olive oil
  • 1 tsp. smoked paprika
  • Salt to taste
  • Pepper to taste
  • fresh basil or parsley for garnish

Method
 

  1. Preheat your oven to 220°C (450°F).
  2. In a large mixing bowl, toss the gnocchi, chorizo, diced bell pepper, sliced courgette, red onion wedges, and halved cherry tomatoes with olive oil, smoked paprika, salt, and pepper.
  3. Spread the mixture evenly on a large baking tray in a single layer.
  4. Roast in the preheated oven for about 20-25 minutes, stirring halfway through.
  5. The dish is ready when the gnocchi are golden brown and crispy and the vegetables have softened.
  6. Remove from the oven and garnish with fresh basil or parsley before serving.
