  • 2 Tbsp. olive oil
  • 4 cloves garlic, minced
  • 1 Tbsp. fresh rosemary, chopped
  • 1 Tbsp. fresh thyme, chopped
  • 1 tsp. salt
  • ½ tsp. black pepper
  • 1 piece lemon, zested and juiced

Method
 

  1. Begin by preheating your oven to 425°F (220°C). This ensures that your chicken can develop that glorious crispy skin right from the start.
  2. In a large mixing bowl, combine the olive oil, minced garlic, chopped rosemary, chopped thyme, salt, black pepper, lemon zest, and lemon juice. Whisk everything together until it forms a fragrant paste.
  3. Add your bone-in chicken thighs to the bowl. Using your hands, massage the marinade into the chicken, ensuring every nook and cranny is coated.
  4. Line your baking sheet with parchment paper or aluminum foil. Place the chicken thighs skin-side up on the sheet, making sure they’re spaced out well.
  5. Pop the chicken in the preheated oven and roast for 35-40 minutes. When the skin is golden brown and crispy, and the internal temperature hits 165°F (75°C), they’re done.

Notes

For irresistibly crispy skin, pat the chicken dry before marinating, and avoid overcrowding the pan.
