- Preheat your oven to 350°F (175°C) and prepare your muffin pan with paper liners or a good greasing.
- In a large bowl, whisk together the flour, baking powder, cinnamon, and salt until well combined.
- In a separate bowl, combine melted butter and sugar. Whisk until smooth, then add eggs, vanilla, and milk, stirring until mixed.
- Gradually fold the dry ingredients into the wet mixture. Gently fold in the diced apples and walnuts, if using, until evenly distributed.
- Fill each muffin liner about three-quarters full.
- Bake for 18-20 minutes until tops are golden and a toothpick inserted comes out clean. Let cool before transferring to a wire rack.
- Enjoy warm with a pat of butter or a drizzle of honey.
