Cozy Apple Cinnamon Breakfast Muffins

Ingredients

  • 2 cups all-purpose flour
  • 1 Tbsp. baking powder
  • 1 tsp. ground cinnamon
  • ½ tsp. salt

  • ½ cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp. vanilla extract
  • ½ cup milk

  • 2 medium apples, peeled and diced (Honeycrisp recommended)

  • ½ cup chopped walnuts for an extra nutty flavor

Method
 

  1. Preheat your oven to 350°F (175°C) and prepare your muffin pan with paper liners or a good greasing.
  2. In a large bowl, whisk together the flour, baking powder, cinnamon, and salt until well combined.
  3. In a separate bowl, combine melted butter and sugar. Whisk until smooth, then add eggs, vanilla, and milk, stirring until mixed.
  4. Gradually fold the dry ingredients into the wet mixture. Gently fold in the diced apples and walnuts, if using, until evenly distributed.
  5. Fill each muffin liner about three-quarters full.
  6. Bake for 18-20 minutes until tops are golden and a toothpick inserted comes out clean. Let cool before transferring to a wire rack.
  7. Enjoy warm with a pat of butter or a drizzle of honey.

Notes

These muffins freeze beautifully, so consider making a double batch to enjoy later!
