- Slice zucchini thinly. If using fresh bell peppers, toss them in olive oil, salt, and pepper, then roast until blistered and tender.
- Heat a skillet over medium heat. Spread butter generously on one side of each slice of sourdough bread.
- Place one slice of bread, buttered side down, in the pan. Layer cheddar and mozzarella over the bread, then add the grilled veggies on top.
- Top with the second slice of bread, buttered side up, and press down gently. Cook for 4-5 minutes, then flip and cook another 4-5 minutes until golden brown.
- Remove from skillet, let sit for a minute, then slice in half and enjoy!
