Comforting Grilled Veggie Cheese Toastie

A cozy, delicious cheese toastie layered with grilled veggies, cheddar, and mozzarella, grilled to golden perfection.

Ingredients

  • 2 slices sourdough bread
  • 100 g mature cheddar cheese, grated
  • 50 g mozzarella cheese, grated
  • 1 small zucchini, thinly sliced
  • 1 whole red bell pepper, roasted
  • 1 Tbsp. olive oil
  • salt and pepper, to taste
  • butter, for spreading

  • Spatula

Method
 

  1. Slice zucchini thinly. If using fresh bell peppers, toss them in olive oil, salt, and pepper, then roast until blistered and tender.
  2. Heat a skillet over medium heat. Spread butter generously on one side of each slice of sourdough bread.
  3. Place one slice of bread, buttered side down, in the pan. Layer cheddar and mozzarella over the bread, then add the grilled veggies on top.
  4. Top with the second slice of bread, buttered side up, and press down gently. Cook for 4-5 minutes, then flip and cook another 4-5 minutes until golden brown.
  5. Remove from skillet, let sit for a minute, then slice in half and enjoy!
